Homemade Chicken Nuggets and Buffalo Fries

The other day, I was talking online about one of my favorite uses of Keebler Club Crackers. Yes, my kids love to snack on them, but they love the chicken nuggets I make with them even more. The best part about this recipe? The ingredients are simple and they are fast and easy to make and bake.


 

Delicious Chicken Nuggets

This is not a conventional recipe. I just throw things together. So, be brave….It’s worth it!!

Cut up a few chicken breasts into bite sized pieces, dip them in a mixture of melted margarine (about 4 Tbls) and a few drops of Worchestershire sauce, and then coat them with a mixture of bread crumbs, cracker crumbs (stale crackers work, too), Parmesan cheese, and Italian seasonings (I use whatever I have around).

Cook the chicken nuggets at 450º for 7-9 minutes. The kids love them, and I think they taste a lot better than the nuggets you get at fast food places!

 

Buffalo Fries

3-5 medium potatoes, cut into strips
2 Tbls margarine, melted
1/4 tsp ground red pepper

Mix margarine with red pepper; drizzle over potatoes and toss to coat. I like to sprinkle the potatoes with seasoned salt as well.

Bake at 450º for 30-40 minutes, turning every 10 min.

 

Honey mustard dipping sauce

1/2 cup mayonnaise
4 tsp dijon mustard
1 Tbls honey

Stir above ingredients and serve cold with fries and nuggets.

 

This has been one of my easy, go-to recipes for years. Kids of all ages love it….and so do mom and dad!
