Individual Whole-Wheat Cinnamon Banana Puddings

Remember a month or so back when I teased you with photos of a recipe project that I was working on? It’s finally time to share all of the details, along with the first of many recipes that I came up with for WhoNu? Cookies. If you’re not familiar with WhoNu? – a collection of nutrition-rich cookies – you must check them out (and then go buy a box or two). They are amazing…not only alone, but as ingredients in a host of other treats (and, yes, that’s where I come in).

I worked for a few weeks in July baking up a storm (I had to invite friends over just to help eat all of the treats I was making). Recipe-creation takes a bit of trial and error, and there was lots of taste-testing, tons of photos, and plenty of happy kids in my house while the experiments were going on.

Here’s the first recipe I wanted to share. You can find this recipe on WhoNu?’s website, too (along with many others).

Ingredients
  • ½ cup sugar
  • ⅓ cup whole-wheat flour
  • 2 eggs
  • 2 cups milk
  • ¼ tsp salt
  • ½ tsp vanilla
  • ½ tsp cinnamon
  • 24 WhoNu?® Vanilla Wafer Cookies
  • 2 large bananas, sliced

Instructions
  1. In a medium saucepan, add sugar, flour, eggs, milk and salt. Stir well with a whisk.
  2. Cook the mixture over medium-low heat, stirring constantly, until it starts to thicken (about 15 minutes).
  3. Remove the saucepan from heat and stir in the vanilla and cinnamon. Set aside.
  4. Place 1 WhoNu?® Vanilla Wafer Cookie on the bottom of each of 12 paper-lined muffin cups. (We recommend buying the cups that are lined with foil.)
  5. Place 3 banana slices on top of the cookie.
  6. Pour pudding over the cookie and bananas, filling each muffin liner about ¾ full.
  7. Banana puddings can be eaten hot, or chilled and eaten cold later. Yummy topped with whipped cream!
