Like most Americans, I’m sure, I adore the taste of chocolate, graham crackers, and gooey marshmallows together. And I’m also sure I’m not alone in dreading the hassle that it is to make s’mores. Classic over-the-campfire s’mores are great when you’re camping, but what about when you’re at home…in your air conditioned kitchen?
I had been craving the taste of s’mores recently – and not craving having to build a fire or fire up the grill – and so I decided to try out S’mores bars. They were a bigger hit than I imagined!
The original recipe I found on Food.com called for baking the crust for 15 minutes before adding the chocolate, marshmallow and top crust, but I failed to do that step…I realized my mistake when the layers were all set to go into the oven and decided to take my chances. Since the bars turned out perfectly baking it the way I did, with just one 15 minute session in the oven instead of two, I figured I’d leave the recipe like this. No one will complain about having their s’mores bars ready in half the time, right??
- ½ cup butter, softened
- ¾ cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1⅓ cups flour
- ¾ cup graham cracker crumbs (I used cinnamon graham crackers)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 cups semi-sweet chocolate chips
- 3 cups mini marshmallows
- Heat oven to 350ºF.
- Beat butter and sugar together in a large bowl. Add egg and vanilla and mix well.
- In a separate bowl, add flour, graham cracker crumbs, baking powder, and salt; stir. Add dry ingredients to butter mixture and beat until blended.
- Press about half the dough into a 9×13 inch baking dish.
- Spread chocolate chips over the crust layer then sprinkle marshmallows on top of chocolate. Finish by crumbling the remaining dough over the marshmallows.
- Bake 15 minutes or until the top is lightly browned. Let cool in the pan for at least 15 minutes before cutting into squares.
