Caribbean Cilantro-Lime Chicken Soup

I made this soup last month just before traveling to L.A. and forgot to post the recipe until now. This soup was so delicious that I can’t recommend it enough. Please note: the pictures shown seem to hide the fact that this is a soup. There is broth under all of that rice and chicken goodness, I promise!

Caribbean Cilantro-Lime Chicken Soup

Ingredients
  • 4 boneless, skinless chicken thighs or breasts
  • 1 tablespoon jerk seasoning (or make your own Caribbean rub)
  • 2 teaspoons vegetable oil
  • 1 medium onion, chopped (1/2 cup)
  • 1 teaspoon minced garlic
  • 4 cups chicken broth
  • 1 tablespoon adobo sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen peas (or one can, drained)
  • ½ cup unsweetened coconut milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 3 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro, chopped
  • Hot cooked rice
  • Fresh cilantro leaves
Instructions
  1. Sprinkle chicken evenly with jerk seasoning.
  2. Heat oil over medium-high heat in a small skillet. Cook onion and garlic for about 3 minutes, stirring occasionally, until tender. Spoon onion and garlic to the slow cooker.
  3. Add chicken to the slow cooker. Pour the broth, adobo sauce, beans, coconut milk, salt and pepper over the chicken.
  4. Cover; cook on Low for 4-6 hours.
  5. Remove chicken from slow cooker to plate. Shred/cut chicken into bite-sized pieces and then return chicken to slow cooker. Stir in lime juice and chopped cilantro. To serve, place a scoop of rice in a bowl and pour soup over rice; garnish with cilantro and lime wedges.
