Ham and Spinach Mini Quiche

My youngest son, AJ, and I used to go to Costco just to eat mini quiche samples. We couldn’t get enough of them. Parties, buffets, picnics…mini quiches are perfect for so many occasions but I had no idea until recently that they were so easy to make. Now that I can easily whip up a couple dozen mini quiches, they are now one of my favorite breakfast, brunch, lunch, or snack foods (and I don’t have to make a run to Costco or crash any parties to sneak a few).

Ingredients
  • 1 package refrigerated pie crust
  • Vegetable oil
  • 1 small onion, finely diced
  • ½ cup fresh spinach, chopped
  • ½ cup ham, diced
  • 5 eggs
  • 1 cup cream
  • ½ cup grated cheddar cheese
  • 1 teaspoon dried parsley
  • salt & pepper, to taste

Instructions
  1. Cook the onion in a small amount of oil over low heat for about 3 minutes, and then add spinach and ham. Cook until the onion is softened. Allow to cool slightly.
  2. Mix onion mixture together with the eggs, cream, cheese, parsley, salt and pepper.
  3. Unroll the pie crust sheets and, using a round cookie cutter or glass, cut circles from each sheet. Line mini muffin pan with circles; press gently into muffin cups.
  4. Place a spoonful of the egg mixture into each crust-lined muffin cup (fill almost to the top).
  5. Bake at 350 degrees for about 12 minutes, until golden and eggs are set.
  6. Cool for several minutes and carefully remove from muffin tin by lifting edge with a knife.

This recipe can be easily adjusted to taste: leave out the spinach and add Swiss cheese for ham and Swiss quiches. Love bacon? Add crumbled bacon instead of ham. Want a veggie version? Just leave out the meat and add a little more spinach or chopped broccoli to the egg mixture.
