I’m convinced that summer was made for grilling. Or grilling was made for summer. Whichever way you look at it, there’s nothing more perfect for a summer dinner than meats and veggies cooked on the grill.
This past month has been filled with road trips and lots of time hanging out with family. When we’re on the go all day long during the summer (who am I joking? We’re on the go all year long!), the last thing I want to do is spend precious together-time grocery shopping and cooking a complicated meal. With more mouths to feed, there’s an even greater need to find quick and easy dinners to make.
After a long day of hiking recently, I needed something easy to whip up for dinner. I had an idea, made a quick Target run to grab a few fresh ingredients, and dinner was on the table in a flash. I love that Target is filled with everything I need - from fresh vegetables to chicken and hot dogs to skewers for our kabobs - and I can find my way around the store, whether I’m shopping in Maryland or Utah or anywhere in between.
Our 15-minute kabobs on the grill could not have been a more perfect fit for a night when we were tired and hungry. All it took was cutting ingredients up into bite-sized chunks, adding them to a skewer, and throwing them on the hot grill.
Possibly one of the best things about this easy dinner is that it is easy to customize each skewer for each person of the family. If someone doesn’t like mushrooms, then you simply leave it off their skewers. Next time, I’m going to have everyone put together their own skewers.
15-Minute Grilled Chicken or Hot Dog Kabobs with Vegetables
Ingredients
- 1 chicken breast, cut into 1-2 inch chunks
- 2 hot dogs, cut into 1-inch slices
- 1 zucchini, cut into bite-sized pieces
- ⅓ of a red onion, cut into 1-inch wedges
- 6 orange sweet peppers (or bell pepper), cut into 1-2 inch chunks
- 6 mushrooms
- 12 baby red potatoes, cut in half
- BBQ sauce (I used Sweet Baby Ray’s sweet chipotle BBQ sauce)
- Skewers
Instructions
- Slice baby potatoes and microwave them for 2 minutes on high. Meanwhile, heat up your grill to medium-high.
- Slice meats and the rest of the vegetables.
- Add meats and vegetables to skewers, alternating ingredients. Place skewers on grill.
- Cook for 2-3 minutes, and then flip the skewers over. Generously brush the meats and veggies with BBQ sauce (on the side that was cooked).
- After another 2-3 minutes, flip the skewers so that the first side is now facing up. Brush that side generously with BBQ sauce. Every few minutes, flip the kabobs so that all sides get cooked. Continue brushing with BBQ sauce.
- Kabobs are ready to eat when chicken pieces are cooked through, about 10-15 minutes.

I had never used hot dogs on kabobs before, either, but I decided to be adventurous, and they turned out so tasty!
